How to Roast Your Pumpkin Seeds:

When your seeds are all clean, it’s time to roast them up!

If your seeds are still wet, you need to dry them:

Preheat your oven to 200 degrees F.

Spread your seeds on a baking sheet (I line mine with parchment for easy clean up.)

Bake until the seeds are throughly dry, you may need to get in there a few times and stir them a bit.

The amount of time will depend how wet your seeds are.

When you’re ready to roast them:

Increase oven temperature to 325 degrees F.

Drizzle your dry seeds with a tablespoon or so of neutral oil (avocado, safflower, canola) stir to coat evenly with the oil and sprinkle with salt.

Pop them in the oven and roast until they are evenly toasted and brown - about 20-25 minutes.

Halloween is always such a busy time with costumes, parties and parades, but I always want to make a fun festive treat… These delicious no-mix, 3-ingredient treats fit the bill and come together in about 5 minutes! They are delicious with the salty crisp pretzels and the creamy sweet candy kisses! You can pack them up into trick-or-treat bags, fill up jars for teacher or hostess gifts or you can save them all for yourself!

INGREDIENTS:

For the Candy Corn Hug Treats You’ll Need:

  • Bite Sized Pretzels (checkerboard Snaps, Minis or round wagon wheel shaped ones all work great!)

  • Hershey Hugs Candy Kisses, unwrapped

  • Candy Corn

For the Eyeball Treats You’ll Need:

  • Bite Sized Pretzels

  • Hershey Candy Cane Kisses, unwrapped (I bought these out-of-season on Amazon)

  • Eyeball Candies (I used Wilton brand - You can find these in grocery and craft stores during Halloween season or Amazon off-season)

DIRECTIONS:

Preheat oven to 25O degrees F.

Lay pretzels on baking sheet(s).

Top with desired Hershey Kisses Candies.

Place in oven for about 4 minutes or until Kisses are soft and shiny (they should still hold their shape, but can be “smooshed” when topped with candy corn or eyeball)

Remove from oven and top with either candy corn or eyeball candies.

Let them cool off and set-up. (You can speed this up in the refrigerator.)

Store in a cool place in an air-tight container.

Make Broccoli Tots in your Food Processor: 

(I have made these with the KitchenAid 9, 11 and 13 cup Food Processors)

INGREDIENTS:

Non-stick cooking spray or oil

2½ -3 cups fresh broccoli florets

2 pieces sweet onion (1” x 1”)

2 tablespoons flat leaf parsley leaves

1/3 cup shredded cheddar cheese

1/3 cup panko breadcrumbs

1/3 cup Italian seasoned breadcrumbs

½ teaspoon salt

¼ teaspoon pepper

1 large egg, beaten in measuring cup

DIRECTIONS:

Preheat oven to 400 degrees F.

Spray baking sheet with non-stick cooking spray or line with parchment.

 

Blanch the broccoli florets in boiling water for 1 minute (should turn bright green), then remove and place in ice water to stop the cooking process and set the green color.  Drain well

 

Start food processor (large bowl w/multi-purpose, metal blade) on low.  Add onion and parsley through the feed tube while food processor is running.  Stop and add broccoli.  Pulse first to break up.  Run on high, stop scrape bowl and run some more if needed.

 

Add breadcrumbs, cheese, salt and pepper - Pulse until combined.  Run the FP on low and drizzle in beaten egg. 

 

Scoop about a 2-tablespoon portion of mixture.  Gently give a squeeze with your hand, roll and pat into a “tater-tot” shape.  Place on prepared baking sheet.

 

Spray them or drizzle with a little non-stick cooking spray or oil.

 

Bake until golden brown and crispy about 18-22 minutes., turning them half-way through cooking.
