This quick, easy and delicious Banana Oat Pancake recipe uses 100% oat flour, which is easy to make at home (if you have some oats stashed in your pantry!) The pancakes are fluffy and moist with a lovely banana taste! It's like having your favorite banana bread in a pancake!
I mix this pancake batter in my blender or food processor. You can also mash the bananas and mix the batter by hand or with a hand mixer.
Preheat and grease griddle.
Combine all ingredients and mix until all dry ingredients are mixed-in. Scrape down container and mix for a few more seconds.
Let the batter rest for a few minutes, the oat flour will hydrate more fully and the batter will thicken up a bit.
Pour 4-5-inch pancakes on hot griddle. They are ready to turn when bubbles form and underside is golden brown. After flipping they will puff in the center. When the center springs back when lightly touched, they're done.

DIY Oat Flour:
Oat flour is one of the easiest flours to make yourself! All you need is old-fashioned (rolled) oats or quick-cook oats and a blender, chopper, food processor or grain mill. 1-cup of oats makes about 1-cup of oat flour (depending how finely you grind it.) I find I get the finest textured oat flour when I use my powerful blender.When substituting oat flour for all-purpose flour you'll need a little more oat flour. 1 1/3 cup oat flour = 1 cup all-purpose flour. (approx.) You may also need a little more leavening in your recipe as oat flour is a whole grain and a little denser. (Sometimes I add a little more baking powder and/or an extra egg.) Also, if making something like bread, you may want to sift your oat flour to help break up any clumps.
