Celebrate the holidays or ring in the new year with this festive cocktail! Fresh cranberries, orange and ginger simmer together to make a delicious and beautiful ruby red colored syrup. Pour a little in your glass then top with Prosecco or Champagne! Cheers!
Prosecco or ChampagneLess sweet variety: brut or extra dry
Additional cranberries, for garnishoptional
Orange peel strips, for garnishoptional
Instructions
Cranberry, Orange and Ginger Syrup:
Place whole fresh cranberries and ginger in food processor, chopper or blender. Process until finely chopped.
Pour chopped cranberry mixture into saucepan. Add water, zest and juice from 1 navel orange and 3/4 cup sugar. Bring to boil, reduce heat to simmer. Simmer uncovered for 10 minutes, stirring frequently.
Strain the cranberry mixture with a fine mesh strainer. Gently press with a spoon or spatula to release all the syrup. Place the strained syrup in refrigerator to cool. (discard cranberry solids or use as a cranberry relish.)
Optional: Cranberry Orange Sugar:
Place sugar, dried cranberries and orange zest in food processor, blender or chopper. Process until the dried cranberries are finely chopped. Store in an air-tight container in the refrigerator for a week. To rim the glasses, moisten edge with water or orange juice then dip rim in Cranberry Orange Sugar.
Make The Cocktails!
Rim the glasses with Cranberry Orange Sugar, if desired.
Add a couple whole cranberries and a strip of orange peel, if desired.
Add a teaspoon or two of Cranberry, Orange and Ginger Syrup to the bottom of each glass. (Depending how sweet you'd like your cocktail.)
Fill each glass with chilled Prosecco or Champagne.
Notes
Make Ahead: Store the syrup in the refrigerator for up to a week.You'll be able to pour approx. 5-6 servings from a typical 750 ml bottle of Prosecco or Champagne.
