Easy & delicious homemade raspberry vinaigrette dressing! It's thick in texture and sweet with a little tang. We love this with summer salads! One of our favorites is baby spinach, feta cheese crumbles, fresh berries and toasted walnuts or pecans - sometimes we add grilled chicken too!Recipe adapted from: Carole A. Haffey, Food Stylist
1-2tablespoonshoneyoptional, to taste (depends on sweetness of berries)
1/2 teaspoonsaltI use coarse kosher salt
1/4teaspoonpepper
1/2cupoilolive oil or avocado oil
Instructions
Puree raspberries and red wine vinegar.
Add Dijon mustard, honey, salt and pepper.
While whisking this mixture slowly drizzle in oil to emulsify mixture. (see notes below for using chopper or immersion blender)
Notes
KitchenAid Chopper (Mini Food Processor)
Use the metal multi-purpose blade, add all ingredients and blend until thick and smooth.
KitchenAid Hand Blender (Immersion Blender)
Just combine all the ingredients in the blending jar or similar container. Blend, moving hand blender up and down until the mixture is thick and smooth.
