1/4cupcanned diced tomatoes with green chiliessuch as Rotel brand
Instructions
Blend the cottage cheese, taco seasoning and heavy cream (optional).
Add the cheddar and Rotel (canned diced tomatoes + green chilies) and pulse to just combine.
Heating Options: (Microwaving until just heated provides the smoothest results. Baking has the appearance of not being creamy, but still tastes creamy and delicious!)
Add to small (makes about 2 cups) heat safe baking dish (microwave safe if microwaving)Miicrowave: 90-120 seconds, stirring at 30 second intervals until just heated through.Bake: Top with additional cheese and Bake at 350 degrees F. for 20-25 minutes.
Serve with your favorite dippers!
