My version of the viral Boat Dip recipe. I add some extra flavorful ingredients that just may Sink the Boat! Cream cheese and sour cream make up the creamy base, then you can add either taco seasoning or ranch seasoning, Rotel tomatoes, corn, bacon, shredded cheddar and chives! Yum! You'll be enjoying this easy to make and flavorful dip all summer long! (Whether or not a boat is involved!)
1 electric mixer makes it easy to whip up the cream cheese
Ingredients
8ouncescream cheese (I use Philadelphia brand)Room Temperature
16ouncessour cream
1ounce packetranch or taco seasoningI like both or a combo!
10ounce canRotel (diced tomatoes and chilies)drained
11ounce cancorndrained
2cupsshredded cheddar8-ounce package
1/2cupcooked and chopped baconabout 8 slices
2tablespoonssliced chives or green onions
Serve with your favorite dippers! I like tortilla, potato or corn chips!
Instructions
In large bowl, beat cream cheese until smooth. I find it helpful to use an electric mixer to get out all the lumps. I use my KitchenAid hand or stand mixer with flex edge beater(s).
Add sour cream and mix until smooth. Add all other ingredients and mix until well combined.
Refrigerate for several hours or overnight. Can be made 2-3 days in advance.
