Enjoy a healthy dose of protein in this sweet treat! My (actually tasty!) version of the viral Cottage Cheese Chocolate Pudding Trend - 5 simple ingredients - make a creamy, chocolatey, protein-packed dessert! (Don't forget the dollop of whipped cream!) I use my KitchenAid 7-cup Food Processor to whip up my Cottage Cheese Chocolate Pudding!
1 food processor or chopper (I use my KitchenAid 7-Cup Food Processor)
Ingredients
2cups2 or 4% cottage cheesesee note
1ripebanana
2tablespoonsmaple syrupplus more to taste*
5tablespoons (1/4 cup + 1 tablespoon)cocoa (cacao) powderunsweetened
1/2cupchocolate protein powdersee note
Whipped Cream: Optional for Topping
1/2cupheavy "whipping" cream
2tablespoonspowdered sugar (or equivalent of powdered sugar substitute)
1teaspoonvanilla pudding mixoptional - helps to stay fluffy when making ahead.
Instructions
Add cottage cheese to food processor or chopper. Blend until almost smooth.
Peel and cut banana into chunks and add to processor along with maple syrup, cocoa powder and protein powder.
Process until smooth and well combined.
Pour into individual serving containers (if desired.)
Chill for at least 2 hours. Store covered in refrigerator for up to 5 days.
To Make Whipped Cream: (optional)
Whisk together the cream, powdered sugar and pudding mix (if using) until thick and creamy.
Notes
Protein Powder:
I have used both whey and plant based protein powder. Isopure Whey chocolate protein powderOrgain Chocolate Plant Based Protein PowderTexture may vary depending upon what type (whey or plant based) and brand of protein powder you use. You may just need to adjust amount to your desired texture. I tend to like the whey protein texture a little bit more in this recipe.
Cottage Cheese:
Like protein powders, some cottage cheese brands can vary in texture. I have used the Good Culture and Daisy brands. If your cottage cheese is thicker or thinner, you may need to adjust amount to your desired texture.
Disclaimer:
This is a high-protein version of "pudding" in much the same way that there are chia seed "puddings." It's not really going to compare taste or texture-wise to your grandma's homemade rich and delicious real chocolate pudding.
