When you want some Quick and Easy Tomato Soup, but you don't want to use the canned or boxed stuff (with their long ingredients lists). This recipe makes a delicious creamy tomato soup in a hurry and the ingredients are largely pantry staples! (Canned tomatoes to the rescue!)

Equipment

  • 1 blender to puree soup

Ingredients

  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 cup chopped onion
  • 2 cloves garlic chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon Italian seasoning
  • 2 (28 ounce) cans diced tomatoes
  • 28 ounces chicken broth you can measure with one of the empty tomato cans.
  • 1/8 baking soda
  • 1/3 cup heavy cream

Instructions 

  • Add oil and butter to pot (4-quart) over medium heat. Saute onion until translucent and softened.
  • Add garlic, salt, pepper, tomato paste, sugar and Italian seasoning.
  • Saute for about 1-2 minutes.
  • Add diced tomatoes (not drained) and chicken broth.
  • Simmer, stirring frequently for about 20 minutes, partially covered.
  • Blend soup to puree if desired. Add back to pot if not using an immersion blender.
  • Add baking soda and stir in, will foam up a little - (helps to reduce some of the acidity.) Stir in heavy cream.
