This Greek Yogurt Biscoff Cheesecake (aka: Japanese Cheesecake) was really tasty and just so easy! It would be really easy to customize and try different flavor combinations!It's called "Cheesecake" because the cookies soften in the yogurt and it does lend a cheesecake taste to the yogurt. I was wondering if the cookies would sweeten the plain yogurt enough and surprisingly they do! I like the bit of tang along with the sweetness infused from the cookies. Greek Yogurt is pretty healthy, but then we're adding a bunch of cookies to it. So, to me, it is more of a treat.

Ingredients
16ounce tubPlain Greek Yogurt
1teaspooninstant espresso powder
15Biscoff Cookiesapproximate amount - adjust depending upon your taste and the size of your yogurt container
cocoa powderto sprinkle on top
Instructions
Mix 16 ounces plain Greek yogurt with 1 teaspoon espresso powder - right inside 16 ounce yogurt container
Push Biscoff cookies into yogurt mixture - may need to break cookies in half depending how deep container is.
Sprinkle with cocoa powder (kind of like with tiramisu)
Put lid on and refrigerate 12-24 hours.
