I Made the Viral Greek Yogurt Biscoff Cheesecake

and I really liked it!!

I have tried my fair share of viral recipes – with varying results. This Greek Yogurt Biscoff Cheesecake (aka: Japanese Cheesecake) was really tasty and just so easy! It would be really easy to customize and try different flavor combinations!

It’s called “Cheesecake” because the cookies soften in the yogurt and it does lend a cheesecake taste to the yogurt. I was wondering if the cookies would sweeten the plain yogurt enough and surprisingly they do! I like the bit of tang along with the sweetness infused from the cookies. But, you could always start with vanilla yogurt if you like a little sweeter taste! Expectation-wise, it’s not going to be like a scrumptious slice of your favorite cheesecake. Also, plain (unsweetened) Greek Yogurt is pretty healthy, but then we’re adding a bunch of cookies to it. So, to me, it is more of a treat.

I Made Two Versions of the Viral Greek Yogurt Biscoff Cheesecake:

  • Plain/Orginal: Greek Yogurt Biscoff Cheesecake:
    • Plain Greek Yogurt
    • Biscoff Cookies
  • Tiramisu Version: Greek Yogurt Biscoff Cheesecake:
    • Plain Greek Yogurt
    • Espresso Powder
    • Biscoff Cookies
    • Cocoa Powder

My taste testers were torn, some liked the Plain version and some the Tiramisu version. You can taste more of the Biscoff Cookie flavor in the plain version. Have fun experimenting with your own combinations and let me know in the comments what you end up trying!

What is Biscoff?

Lotus Biscoff is a brand of Belgian speculoos cookies, which are crispy, crunchy in texture and spiced with cinnamon, nutmeg, cloves, and ginger. They also make a delicious Biscoff Cookie Butter!

How to Make (Tiramisu Version) of the Viral Greek Yogurt Biscoff Cheesecake:

Start with a 16 ounce tub of Plain Greek Yogurt

Add a teaspoon of espresso powder

Mix it up with your KitchenAid Hand Mixer (if you like!)

Push cookies into mixture

Sprinkle with cocoa powder and refrigerate

Ingredients

  • 16 ounce tub Plain Greek Yogurt
  • 1 teaspoon instant espresso powder
  • 15 Biscoff Cookies approximate amount – adjust depending upon your taste and the size of your yogurt container
  • cocoa powder to sprinkle on top

Instructions 

  • Mix 16 ounces plain Greek yogurt with 1 teaspoon espresso powder – right inside 16 ounce yogurt container
  • Push Biscoff cookies into yogurt mixture – may need to break cookies in half depending how deep container is.
  • Sprinkle with cocoa powder (kind of like with tiramisu)
  • Put lid on and refrigerate 12-24 hours.
