Sugar Cookie Peach Cobbler

Take advantage of the gorgeous peaches in the market right now and make this super easy Sugar Cookie Peach Cobbler! Sliced peaches are tossed with just a little sugar, flour, cinnamon and lemon juice. Then, mix up a simple sugar cookie dough to dollop over the peaches – bake it up until bubbly and golden brown! Serve while still warm with vanilla ice cream or whipped cream!

Tip: I used a serrated (soft fruit) peeler to quickly and easily peel my peaches. Looks like a regular hand-held fruit/vegetable peeler, but has a serrated edge.

Ingredients

For Fruit:

  • 5 cups fresh peaches peeled and sliced (4-5 large peaches)
  • 1/2 teaspoon cinnamon
  • 4 teaspoons sugar
  • 4 teaspoons flour
  • 1 tablespoon fresh lemon juice

For Sugar Cookie Topping:

  • 1/4 cup butter, softened plus extra for greasing pan
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla
  • 1 large egg
  • 1/2 cup flour
  • 1/16 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 tablespoon coarse sparkling or granulated sugar for sprinkling on topping

Instructions 

  • Preheat oven to 350 degrees F. Grease 2-quart shallow baking dish with butter.

For Fruit:

  • Add sliced peaches to large bowl. Stir together flour, sugar and cinnamon in small bowl. Add to peaches.
  • Add lemon juice and stir well to coat peach slices. Pour into prepared baking dish.

For Sugar Cookie Topping:

  • Cream together butter and sugar using hand mixer. Mix in vanilla and egg.
  • In small bowl, stir together flour, nutmeg, baking powder and salt. Mix into butter mixture. (Will be a soft dough.)
  • Spoon dollops of mixture over fruit. (The mixture will spread out while baking.) Sprinkle the dollops with coarse sparkling sugar.
  • Bake for 45-50 minutes or until the fruit is bubbly all the way to the center and the sugar cookie topping is golden brown and set in the center. If the edges get too dark, you can cover loosely with foil.

    i cant wait to maje this. i like this is mot a normal cobbler topping. ty for ideas. i live my kitchen aid liftpro 6 quart. i broke my firsy ine as i did not snap bowl in. i nought used so i could not fix.

      Hi Cynthia – I feel like I’d use frozen peaches over canned peaches. Canned peaches just tend to be softer than fresh or frozen and are usually sweetened. I would think the final dish may be too soft/sweet.
