Easy Basic Vinaigrette Dressing

This is a delicious basic vinaigrette dressing recipe that can easily be customized! Change up the vinegar, oil or herbs! Add more garlic or swap in some minced shallots!

You can whisk it by hand, shake it up in a jar or use a chopper, blender or food processor! I make mine nice and thick by emulsifying the oil with the other ingrdients in my KitchenAid 5-cup Chopper!

I store mine for about a week in an air-tight container in the refrigerator.

Ingredients

  • 1 small clove garlic or 1/2 teaspoon minced garlic
  • 1 tablespoon fresh herbs (parsley, thyme) or 1 teaspoon dried Italian seasoning
  • 1/4 cup red wine vinegar
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup olive oil

Instructions 

Using Chopper, Blender or Food Processor:

  • If using fresh garlic and herbs – add to chopper container and mince to fine texture.
  • Add vinegar, dijon mustard, salt and pepper and pulse to combine.
  • If using KitchenAid 5-cup Chopper with Whisking Accessory – switch to Whisking Accessory.
  • With unit running, drizzle in the oil.
  • Taste – add more salt if needed.

Whisk by Hand or Shake in Jar:

  • If using fresh garlic and herbs – mince and add to container.
  • Add vinegar, dijon mustard, salt and pepper and pulse to combine.
  • Add oil while whisking vigorously or shake in jar.

Storage:

  • Store for up to a week in an air-tight container in the refrigerator.

    Can the dressing be frozen after a week in fridge

      Hi Karen! Are you thinking it will be too large an amount for 1 week? You could always make a half batch? As far as freezing – I’ve never frozen dressing, so I’m not sure how it would come out. I did a little looking on the internet – seems there are mixed results. Take care!

    This looks like a great vinaigrette recipe, there is no sugar in it. I will definitely try this one.
