Easy Creamy Coleslaw!

This easy homemade coleslaw dressing is delicious! It’s creamy, tangy and full of fresh herbs!

You can use bagged pre-shredded cabbage or cut it yourself!

How do you like your cabbage cut for Coleslaw?

  • Minced
  • Finely Shredded
  • Long Shreds

You can use a food processor to quickly and easily cut your cabbage exactly the way you like it!

Minced Cabbage: Use the metal multi-purpose blade and drop in 1 1/2 inch chunks of cabbage – only fill the bowl 1/2 way so the cabbage has room to jump around – this is how you get more even chopping. Pulse to mince as finely as you like.

Finely Shredded: Use the largest shredding disc to shred the cabbage into fine shreds.

This is how I load cabbage slices into the food processor feed tube when I want to shred or slice cabbage.

Long Shreds: I love using the long shreds for tacos! Since the cabbage grows in layers, you can use the slicing disc to cut longer shreds. Choose a thinner slicing disc for thinner shreds and a thicker slicing disc for thicker shreds.

Servings: 1 enough for 6-7 cups of cabbage

Ingredients

  • 2 tablespoons minced Italian (flat leaf) parsley see note on mincing (or 2 teaspoons dried)
  • 2 tablespoons minced fresh dill or 2 teaspoons dried
  • 2 tablespoons thinly sliced chives or 2 teaspoons dried
  • 3/4 cup mayonnaise
  • 1/4 cup buttermilk
  • 2 tablespoons sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon prepared mustard
  • 2 teaspoons celery salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt or to taste

Instructions 

  • Whisk together all ingredients or blend in food processor. Makes about 1 1/2 cups dressing. Store in refrigerator for up to a week. I usually dress my cabbage about an hour before serving.

Notes

Mincing Herbs in Food Processor:

If you're making the dressing in a food processor.  You can easily mince the herbs first.  With the until running - drop the herbs down through the feed tube.  Make sure the bowl and herbs are nice and dry.  For 2 tablespoons minced parsley or dill - I use about 1/4 cup fresh parsley or dill.  For mincing chives in the food processor, cut the chives into about 1" pieces before dropping into food processor.

    Hi Tina,
    Thought I would share my recipe with you- it is a marinated slaw, similar to frozen or german slaw:

    3 pounds cabbage, shredded
    2 green peppers chopped medium and seeded
    1 4 ounce canned pimento
    2 medium onion (i often omit), chopped fine
    1 Tablespoon salt
    2 Tablespoons mustard seed (Can also be omitted to your personal preference)

    In a saucepan, combine (I use large glass measuring cup and dissolve in my microwave)
    2 cups apple cider vinegar
    2 cups water
    2 cups sugar

    Pour liquid mixture over vegetables and refrigerate overnight.

    There only two of us in our family, so I often halve th recipe.

    Can cabbage be shed using stand mixer

      Hi Claire – Thanks for reaching out! You can shred cabbage, using a stand mixer attachment such as the Fresh Prep attachment. It plugs into the power hub of the stand mixer. I have a video here where you can see how it works. You can alternatively shred using a food processor.
