Sharing some combinations that worked well for me!
Below are some “recipes” for various shave ice creations I came up with while using my New KitchenAid Shave Ice Attachment. Share in the comments what you have made and liked!

After you shave your creation – you’ll have a little piece of ice leftover – you can break along the “X” markings and add to your creation as you would stick a cookie into a bowl of ice cream.

My favorite shave ice recipe made with the KitchenAid Shave Ice Attachment! Strawberry lemonade fluffy, snow-like shaved ice – over creamy vanilla ice cream and topped with strawberry puree syrup! YUM!

Shave Ice vs Snow Cone:
Shave Ice is a light fluffy snow-like texture that is shaved right before eating unlike snow cones which are compressed with hard crunchy ice bits and pieces.

KitchenAid Shave Ice Recipe Ideas
Here are some combinations I have tried with my KitchenAid Shave Ice Attachment.Each combination/"recipe" gives amount to fill 1 plastic "ice mold" cup.You can fill about 7-ounces up to the "fill-line" on each cup.Each frozen ice mold cup will make about a pint of shave ice.

- 1 KitchenAid Stand Mixer
Ingredients
Sweet Creamy Espresso Shave Ice – mix well before freezing
- 1 shot (1 oz) espresso
- 2 tablespoons sweetened condensed milk
- 5 ounces milk
Un-Sweetened Creamy Espresso Shave Ice
- 1 shot (1 oz) espresso
- 6 ounces milk
Cold Brew Cloud
- 3.5 ounces cold brew coffee
- 3.5 ounces milk
Vanilla Cream – mix well before freezing
- 1 ounce sweetened condensed milk
- 6 ounces milk
- 1/4 teaspoon vanilla extract
Fluffy Banana Freeze
- 1-2 ripe bananas smush in ice cup up to fill-line with fork
Cosmo Blizzard (cocktail) – see below for alcohol ingredients & info.
- 7 ounces cranberry juice such as Ocean Spray type
Basic Fruit Syrup (for topping shave ice)(this recipe from KitchenAid)
- 2.5 cups (400g) fruit
- 3/4 cup (180 ml) water
- 1/2 cup (130g) sugar
- 1 pinch (0.9g) salt
- 30 ml juice of 1 lemon or lime – unless making citrus flavor
Instructions
General Instructions:
- For all of the above combinations I used the fine shave ice blade and did not need to temper the ice mold "pucks" – just let them sit out long enough so you can pop them out of the mold.Each combination/"recipe" gives amount to fill 1 plastic "ice mold" cup.You can fill about 7-ounces up to the "fill-line" on each cup.Each frozen ice mold cup will make about a pint of shave ice.Freeze 12+ hours or until completely frozen.You can "harvest" the frozen pucks by removing the frozen puck from the cup and storing the pucks in a freezer bag/container.
Any Combination/Recipe with Sweetened Condensed Milk –
- Make sure to mix the the thick sweetened condensed milk well into the other ingredients – so it doesn't settle to the bottom of the ice mold cup during freezing. I usually just whisk the ingredients in a bowl until well mixed. (not vigorous whisking – don't really want to aerate.)
Cosmo Blizzard Cocktail:
- To each chilled martini glass add:
- 1 1/2 oz chilled vodka, 1/2 oz chilled triple sec and 1/2 oz lime juice
- Shave the frozen cranberry juice puck into a bowl and spoon over the alcohol mixture in each glass.
- Garnish with a lime wheel and a cocktail straw.
Basic Fruit Syrup Instructions:
- Add all ingredients in saucepan and bring to boil.
- Simmer until sugars are dissolved and fruit is soft.
- Puree all ingredients and strain.
- Cool completely. Add water if too thick to sink into shave ice.
- Note: all fruit is different as far as sweetness and moisture content – all measurements are approx.
Topping Ideas:
- The coffee and banana mixtures are tasty with caramel, chocolate syrups, whipped cream and/or sweetened condensed milk.Fruit syrups are delicious on plain shaved ice and the vanilla cream

You may call it whatever you like!! They call it “Shave Ice” in lots of places like Hawaii.
