Perfect Tomato Soup For Dipping Your Grilled Cheese!

When you want some Quick and Easy Tomato Soup, but you don’t want to use the canned or boxed stuff (with their long ingredient lists). This recipe makes a delicious creamy tomato soup in a hurry and the ingredients are largely pantry staples! (Canned tomatoes to the rescue!)

It starts with onions, garlic, seasonings and tomato paste. Then you add canned tomatoes and broth. It ends with a touch of baking soda to tame the acidity and some cream for a lovely creamy finish. The recipe is a great starting point for you to customize – sometimes I use shallots instead of onions, add more cream, or use fire roasted tomatoes! Make it your own!

  • parmesan
  • toasted pine nuts
  • tortellini
  • chicken
  • croutons
  • cubed grilled cheese pieces
  • goldfish crackers
  • chopped fresh tomatoes
  • salsa
  • cheddar cheese

What Texture Do you Like your Quick and Easy Tomato Soup?

I like mine really smooth! I either use an immersion blender or a “standard” countertop blender.

I’m using the NEW KitchenAid Pure Power Blender with Glass Jar! (coming 7/5/26 to QVC!) Personally, I love the glass jar as I feel it doesn’t stain or retain odors / flavors! The lid has a heat release vent that helps you confidently blend hot ingredients!

Equipment

  • 1 blender to puree soup

Ingredients

  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 cup chopped onion
  • 2 cloves garlic chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon Italian seasoning
  • 2 (28 ounce) cans diced tomatoes
  • 28 ounces chicken broth you can measure with one of the empty tomato cans.
  • 1/8 baking soda
  • 1/3 cup heavy cream

Instructions 

  • Add oil and butter to pot (4-quart) over medium heat. Saute onion until translucent and softened.
  • Add garlic, salt, pepper, tomato paste, sugar and Italian seasoning.
  • Saute for about 1-2 minutes.
  • Add diced tomatoes (not drained) and chicken broth.
  • Simmer, stirring frequently for about 20 minutes, partially covered.
  • Blend soup to puree if desired. Add back to pot if not using an immersion blender.
  • Add baking soda and stir in, will foam up a little – (helps to reduce some of the acidity.) Stir in heavy cream.
